Ingredients

  1. 2.2 lbsdried chickpeas (soak overnight) (1 kilogram)
  2. 1/2 bunchparsley
  3. 2medium onions
  4. 1large head garlic
  5. 2 teaspoonscornstarch
  6. 1 tablespoonground coriander
  7. 1 tablespoonfalafel spice mix
  8. Salt
  9. 1 teaspoonbaking soda or baking powder (add right before frying, for the whole batch)

Steps

  1. 1

    Grind the soaked chickpeas with the parsley, onions, and garlic until very fine.

  2. 2

    Add the spices, ground coriander, cornstarch, and salt. Mix well.

  3. 3

    Right before frying, add baking soda or baking powder to the portion you want to fry.

  4. 4

    Heat oil and fry the falafel over medium heat.

  5. 5
