Sukiyaki-Style Beef and Sautéed Japanese Yam

Cooking Instructions

Wash and peel the Japanese yam, then cut it into 1/2-inch (1 cm) thick half-moon slices. Cut the beef into strips about 1–1 1/4 inches (2–3 cm) wide. Slice the green onions. In a bowl, mix together all the ingredients marked with ★ (soy sauce, sake, mirin, sugar, miso).

Heat the vegetable oil in a skillet. Sauté the yam slices on both sides until lightly browned. Remove from the pan and set aside.

In the same skillet, cook the beef. Add the mixed ★ seasonings and stir to coat. Once the beef is cooked through, return the sautéed yam to the pan and toss everything together so the flavors combine well.

Serve on a plate and top with green onions and shichimi togarashi as desired. For extra flavor, add garlic or ginger if you like.
