Semovita Cake -Basbousa

Cooking Instructions

Break your egg in a bowl, add sugar and vanilla essence. Beat until pale and creamy.

Add vegetable oil and melted butter,beat for 5mins. Then add the milk, baking powder and mix well.

Add in the semolina flour, flour, dessicated coconut, pinch of salt and mix until fully incorporated.

Spread the mixture into a prepared pan. Bake in a preheated oven at 180'C for 45mins or until a toothpick inserted into the centre comes out clean.

Let's make the syrup for the cake; put your pot/pan on medium flame. Add in sugar, water and lemon juice and stir.

Keep stirring for 5mins or until sugar has dissolved. Bring it to a boil.

Boil, without stirring, for 4 to 5mins or until mixture thickens a bit. Pour syrup over cake and rest for 10mins. Sprinkle some dessicated coconut on top to design.

Cut into desired shapes and serve!

Long story short, my hubby found lots of tangerines on the countertop. He kept reminding me to eat them. But I kept forgetting. Then there’re some avocados in the refrigerator which I should finish it soon too. Then hubby asked me if I could make him a cake. I am looking for my cakes recipes. But the recipe the one I like is mandatory yogurt. Since I don’t have yogurt on hand then I replace it with smashed avocado. That’s why I named it avocado cake. The glaze is so delish, sweet with tangerine and lemon flavor. It’s perfect for coffee or teatime. So I used some of tangerine to make tangerine syrup, and tangerine glaze. The rest of the tangerines I made them into marmalade. For the tangerine marmalade recipe I will post it soon. Now let’s jump to the avocado cake recipe. Nia Hiura -
