Easy Rillettes (Pâté) with Corned Beef

Featured in a recipe book! Just add a little extra to corned beef! Perfect for tonight's wine pairing, cherry blossom viewing, picnics, or potluck parties.
About this recipe
I made this as a dish for a potluck cherry blossom wine party. It's easy to make and looks stylish, so I recommend it! I finely chopped the onion, but if you cut it larger, you can enjoy the texture more. Grind some black pepper over it and enjoy!

Cooking Instructions
- 1
Corned beef is delicious as is. Add a little extra to make it a stylish dish!
- 2
Finely chop the onion, soak it in water, and drain with a paper towel. For those who enjoy texture, coarsely chop it instead.
- 3
Wrap the washed potatoes in plastic wrap and microwave for about 5 minutes (boiling is also fine). Peel while hot and roughly mash with a spatula or fork.
- 4
Mix the chopped onion from step 2, mashed potatoes from step 3, corned beef, and seasonings. Adjust the softness with milk.
- 5
Slice the baguette thinly. Thick slices are fine too, but I personally prefer them thin.
- 6
Toast the thinly sliced baguette until crispy. Store-bought rusks or crackers can also be used.
- 7
Scoop with a spoon and place on the sliced baguette. Sprinkle with black pepper to finish!
- 8
You can also add finely chopped pickles if you like.

My usual recipe for corned beef fritters involves onion. Today I am too lazy to peel and cut an onion, so I tried making the fritters with another recipe. They turn out well and tasty. If you want to make ball-shaped fritters, use a small ice cream spoon to scoop the batter. You can choose not to add any condiments, or add a bit of salt and pepper. Angela Mertoyono -
