Thinly slice the onion and cut the carrot into slices a few millimeters thick.

Season the meat with salt and pepper, then sear it over high heat (no oil needed).

Once the meat is nicely browned all over, it's ready!

Remove the meat and sauté the onion from step 1 until it colors.

In a pot, combine the browned meat, sautéed onion, carrot, wine, bouillon, tomatoes, bay leaves, and water. Simmer over low heat for about 2 hours.

Peel the potatoes.

Add the potatoes and simmer for another 15 minutes.

After cooling, remove the meat and cut it into 8 pieces.

Return the meat to the pot, add the miso, and simmer for a few more minutes to finish.
