Ingredients

Serves 1 serving
  1. 2 tablespoons(about 30 grams) A: additive-free miso
  2. 2 1/2 teaspoons (8 grams)A: organic garlic
  3. 1 tablespoon (15 grams)A: organic ginger
  4. 1 teaspoonA: cane sugar (or brown sugar)
  5. 1 teaspoonA: additive-free gochujang
  6. 1 teaspoonA: pure rice sake
  7. 1 teaspoonA: organic toasted sesame seeds
  8. 1 teaspoonA: organic soy sauce
  9. 1 teaspoonA: organic mirin
  10. 1/2 cupstir-fried vegetables of your choice
  11. as neededtoasted sesame oil
  12. as neededorganic green onions
  13. as neededorganic pasta (or ramen noodles)
  14. For every 4 cups (1 liter) water: 2 teaspoons (10 grams) natural salt
  15. For every 4 cups (1 liter) water: 4 teaspoons (20 grams) food-grade baking soda
  16. 1 1/4 cups (300 ml)kombu-shiitake vegetable broth
  17. as neededonion skins

Steps

  1. 1

    Mix all A ingredients together in advance to make the miso sauce. Store any leftovers in the refrigerator.

  2. 2

    Stir-fry your choice of vegetables and season with salt and pepper to taste.

  3. 3

    Bring water to a boil, add natural salt and baking soda, and cook the pasta (or ramen noodles).

  4. 4

    Heat the kombu-shiitake broth, then add the miso sauce and toasted sesame oil to taste while checking the flavor. Add the cooked noodles, and top with green onions.
