Komatsuna and Tuna Egg Stir-fry Komatsuna and Tuna Egg Stir-fry
Komatsuna contains more calcium than spinach, but my kids don't really like it. I made this to encourage them to eat more. The komatsuna will be easier to eat for kids if you boil it briefly. If you are just making this for adults, you don't need to do this.Don't cook it through too much, or you will lose the crunchy texture of the komatsuna and the fluffiness of the egg. Egg Roll Stir Fry Egg Roll Stir Fry
This is a super simple recipe that kind of reminds me of a deconstructed egg roll. It comes together quickly and makes a good, light lunch. This is the base recipe I start with usually, then from there I'll throw in whatever extra veggies I have on hand (peas, mushrooms, peppers, etc.). If you want it to be more filling, you can stir in some cooked grains to it (like rice or quinoa). This also is good for meal prep and reheats very well. Christina -
