In a bowl, mix together the soy sauce, mirin, sake, sesame oil, and cornstarch. Add the whole chicken thighs and marinate for about 15 minutes.

Heat a frying pan with a little oil. Remove excess marinade from the chicken and place it skin-side down. Cook with the lid on until the skin is lightly browned.

Flip the chicken, cover again, and continue to cook until done.

Add the remaining marinade and water to the pan. Cover and simmer for about 10 minutes.

Once cooked, remove the chicken from the pan and slice it into your preferred size. Arrange on a serving plate.

Pour the remaining sauce from the pan over the chicken.
