Corn Fritters with Beer Batter

I turned fresh corn and edamame into a stylish appetizer! I fried them with a light beer batter. The story behind this recipe: I made this because I found corn at a good price! I had previously made tempura with beer, so I decided to apply that to make light and fluffy corn fritters.

Cooking Instructions

Cut the corn off the cob with a knife, trying not to crush the kernels.

In a bowl, mix the flour with the beer, then add the corn. Place this mixture on a 2-inch square piece of parchment paper.

Gently place the parchment paper with the corn mixture into medium-hot oil and fry. Turn it over and carefully remove the paper.

Place the edamame beans on the spring roll wrappers, roll them up, and seal the edges with the cornstarch mixture. Fry until golden brown.

Sprinkle the fritters with mayonnaise and paprika. Arrange nicely and enjoy as an appetizer!

I think it was frozen corn though...I thought it would be even better made with fresh corn, so I tried making it.If the batter is too loose it won't dry up properly.
