Ingredients

  1. 3 1/2 cupsall-purpose flour (about 450 grams)
  2. 2 teaspoonssalt
  3. 2 tablespoonssugar
  4. 1 packet (7 grams)dry yeast
  5. 2/3 cupwarm milk (150 ml)
  6. 1 tablespoonmelted butter
  7. 1whole egg + 1 egg white (reserve the yolk for later)
  8. ----- Filling:
  9. 4 tablespoonschopped parsley
  10. 1 clovegarlic
  11. 1 tablespoonsoftened butter
  12. 1 tablespoonoil
  13. 3 1/2 ouncesgrated Manchego or cheddar cheese (about 100 grams)

    To start, make the dough: Mix the yeast and milk and let it sit for 10 minutes until it bubbles. Mix the rest of the dry ingredients and add the liquids. Knead the dough by hand for 10 minutes until it becomes elastic. If using a machine, use the dough hook and knead for 7 to 8 minutes. Let the dough rise in a warm place, covered, for a couple of hours.

    Meanwhile, prepare the filling: Chop the garlic with the parsley and cheese. Add the softened butter and oil.

    When the dough has doubled in size, divide it into 4 parts. Roll out each part and spread a quarter of the filling on it. Do the same with the other three parts. Roll up each part.

    Cut the ends, which will be used to decorate the center of the bread. Divide the rest of each roll into triangular pieces.

    In a round pan lined with parchment paper, place the pieces of bread. Let it rise again for another couple of hours in a warm place.

    Finally, brush with the reserved egg yolk mixed with a few drops of cold water. Bake in a preheated oven with convection at 350°F (180°C) for about 25 - 30 minutes.
