Easy Smoky, Spicy Pork Tagine

I know, I know. Pork and tagines don't exactly GO together. On the other hand, if you think of a tagine as a cooking vessel like any other cooking vessel, then sure they go together...

To make this smoky, spicy, super tender pork tagine! :D

If you object to pork, you can use dark meat chicken and also have a delicious result.

And if you don't have a tagine, you can just use a Dutch oven or other oven safe pot.

Ingredients

4 to 6 servings
  1. 2 poundspork shoulder cut into 1.5" cubes
  2. 1onion, diced
  3. 5 clovesgarlic, smashed
  4. 1/2a bell pepper, diced
  5. 3Yukon gold potatoes cut into roughly 1.5" pieces
  6. 15 oz.can tomatoes
  7. 1.5 teaspoonskosher salt
  8. 1/2 teaspoonpepper
  9. 1/2 teaspoonsmoked paprika
  10. 1.5 Tablespoonsolive oil
  11. 2 Tablespoonsgenerally Mexican style hot sauce (I used Yucateca Habanero this time.)
  12. 1 Tablespoonlemon juice
  13. 1 (15 oz.)can of butter beans, drained

Cooking Instructions

    Put all the ingredients into the tagine and give them a thorough mixing to evenly distribute the seasoning.

    Put tagine into a cold oven, set to 350F, and let it cook for 90 minutes. That's it! :)

    Enjoy with rice, tortillas, flat bread, or whatever your starch of choice.
