Fully Hacked - Pancakes (GF/High Fiber/Protein/No Eggs)

This was just a proof of concept of basically how far one could go to have the lowest calorie pancake as humanly possible. I will note that this is not for everyone as it requires ingredients not regularly available to people.

They flipped easily, seemed to be impossible to burn, puffed up well, and even had decent 'weight' to them. I didn't flavor them at all, they were just proof of concepts.

This made two pancakes. Only negative I will add is the texture was slightly weird since oat fiber adds a sort of 'roughness' to the skin of baked products, and protein powder makes a very sturdy bread.

I call the experiment a success however.
Ironically enough, you could probably coax another pancake out of this by adding more water and maybe another tablespoon of pumpkin.

Triple batch is shown above. Best 120 calories ever.

Ingredients

  1. 2 TablespoonsWhey Protein Isolate (~35 calories)
  2. 1/2 TablespoonOat Fiber (All Fiber)
  3. 1 TablespoonPumpkin Puree (~5 calories)
  4. 1 TablespoonPsyllium Husks (All Fiber)
  5. 1/4 teaspoonbaking powder
  6. 4-6 TablespoonsWater

Steps

  1. 1

    Mix all ingredients together and make them as you would pancakes. One thing to note is leaving it around for a bit will definitely thicken up the mixture. You may need to pat down the pancakes to get them to spread
