Remove the thin membrane from the mentaiko. Remove the pit from the umeboshi.

Mix the bonito flakes with soy sauce and wasabi. Finely chop the pickled plum shiso with a knife.

Add the mixture from step 2 and the furikake to the warm rice, and mix evenly.

Place the nori sheet rough side up. Spread the rice mixture evenly in the center, leaving about 1 1/4 inches (3 cm) of space on all sides.

Lay the mentaiko and umeboshi parallel to each other on top of the rice.

Fold the nori from each corner over the rice to wrap it up.

Flip it over and gently press with your hands to flatten.
