A spicy miso ramen made with shirataki noodles for a low-carb, low-calorie option. Adding mushrooms and garlic chives boosts the fiber content.

Thinly slice the shiitake mushrooms. Cut the enoki mushrooms in half. Cut the garlic chives into 1-inch pieces. If needed, boil the shirataki noodles briefly to remove any odor.

Add the shiitake and enoki mushrooms to a pot. Pour in the water and add the chicken bouillon powder. Bring to a boil.

Once the mushrooms are simmering, add the shirataki noodles.

When it comes back to a simmer, add the garlic chives.

Reduce the heat to low and dissolve in the miso paste.

Stir in the chili bean paste (doubanjiang).

Add the butter and sesame seeds, then turn off the heat.

Top with boiled eggs and corn kernels to finish.
