Steps
- 1
Sprinkle the edamame with a little extra salt (not from the listed amount) and rub the pods together to remove the fuzz. Rinse well with water. Slice the garlic into thin rounds.
- 2
Trim both ends of the edamame pods with kitchen scissors. Rub the pods with the salt and let sit for about 10 minutes.
- 3
Add the olive oil and sliced garlic to a skillet. Heat over low heat.
- 4
When the garlic becomes fragrant, add the edamame in a single layer. Cover and cook over medium heat for 5–6 minutes.
- 5
Once the pods are nicely browned, flip them over and cook the other side for another 3–5 minutes until both sides are golden.
- 6
Turn off the heat. Add the curry powder and black pepper, and toss everything to coat evenly.
- 7
Transfer to a serving dish and squeeze lemon over the top if desired.
