Ingredients

Serves 2 servings
  1. 2eggs
  2. 2heaping bowls cooked white rice (about 2 cups/320 grams)
  3. 4 slicesbacon
  4. Salt, to taste
  5. Black pepper, to taste
  6. 1 1/2 teaspoonssoy sauce
  7. 2 teaspoonsbutter (about 10 grams)
  8. 1/2 packageshimeji mushrooms
  9. 3/4 cupwater (200 ml)
  10. 1 tablespoonwhite dashi
  11. 2 teaspoonssoy sauce
  12. 1 teaspooncornstarch
  13. 1 teaspoonwater
  14. Chopped green onions (for garnish, optional)

Steps

  1. 1

    Add the shimeji mushrooms, water, white dashi, and soy sauce to a small saucepan. Heat over medium-low.

    Slice the bacon into thin strips. Sauté in butter over medium heat until crispy.

    Add the cooked rice to the pan. Season with salt and pepper, then stir-fry. Drizzle in the soy sauce and continue to stir-fry.

    Once the soy sauce is evenly mixed into the rice, transfer the rice to a separate plate.

    Next, wrap each serving of rice with egg, one at a time.

    Add a little vegetable oil (not listed in ingredients) to a frying pan. Pour in the beaten eggs and spread thinly, then place the rice mixture from step 4 on top.

    Shape the omurice and transfer to a plate. *If wrapping the rice is difficult, you can simply top the rice with scrambled eggs instead!

  8. 8

    Turn off the heat under the mushroom mixture. Stir together the cornstarch and water, then add to the pan while stirring well. Turn the heat back to low and simmer until thickened, then pour the sauce over the omurice.

    Sprinkle with chopped green onions to finish!
