Prepare the tomato marinade.

Pat the chicken dry and remove any excess fat or tendons.

Cut the chicken into pieces of your desired size.

Pound the chicken pieces to an even thickness, then cut again to make the sizes uniform.

Prepare beaten eggs mixed with panko breadcrumbs and Parmesan cheese.

Season the chicken with salt and pepper.

Coat the chicken first in the egg mixture, then in panko breadcrumbs.

Heat the butter and vegetable oil in a frying pan.

When the butter is melted and starts to bubble, cook the chicken over low to medium heat. Avoid high heat to prevent the butter from burning.

Cook until both sides are golden brown.

Remove the chicken to a tray to drain excess oil.

Serve on a plate and top with the tomato marinade. Enjoy!
