Cut the pork into small pieces and cook in a pressure cooker for about 35 minutes.

Once cooled, heat oil in a skillet and fry the pork until browned. Season with salt and pepper to taste.

In a saucepan, add oil and sauté the onion and quartered tomatoes over low heat until both change color.

Blend the 2 whole tomatoes with a little water and add to the saucepan. Once everything starts to boil, add the pork broth, cilantro sprigs, pork, chipotle pepper, and salt to taste. Let it boil for three minutes and serve.
