Ingredients

  • 60g-80g mugwort paste (or dried mugwort)
  • 250 gbread flour
  • 1 tablespoon (15 g)butter or olive oil
  • 2 tablespoonssugar
  • 1 teaspoonsalt
  • 1/2 cup (110 ml)water
  • 1 teaspoondry yeast
  • 1 tablespoon butter or olive oil
  • If you don't have fresh mugwort, rehydrate dried mugwort in hot water and squeeze it out before using
  • Depending on the moisture content of the paste, adjust the amount of water you add. Generally, it's about 110ml-120ml. If the dough is too soft, adjust with flour

Steps

    Place the bread flour, butter, sugar, salt, mugwort, and water into the bread machine pan, and add the dry yeast to the yeast compartment.

    Set the bread machine to complete the first rise. Once the dough has risen, divide it into 10 pieces. This time, the dough weighed 470g.

    Divide the 470g dough from the bread machine into 10 pieces, each weighing 47g. Cover with a cloth and let rest for 10 minutes.

    After 10 minutes, reshape the dough into balls and let them rise a second time in the oven at 104°F (40°C) for 30-40 minutes, until doubled in size.

    Once the second rise is complete, preheat the oven to 392°F (200°C) and bake at 356°F (180°C) for 12 minutes, switching the trays 3 minutes before the end.

    Adjust the baking time based on your oven. KBB Kitchen baked at 392°F preheat, 338°F for 12 minutes, switching trays for 2 minutes. Beautiful!
