Ingredients

  1. 4large eggs
  2. 3 tablespoonstomato sauce
  3. 1 tablespoonolive oil
  4. 1shallot, chopped
  5. 1rib of celery, chopped
  6. 1 clovegarlic, minced
  7. 1 cupfresh spinach
  8. 1/2 cupcrumbled feta cheese
  9. 1/2red pepper
  10. 1 teaspooncumin powder
  11. 1/2 teaspoonssalt and black pepper

    In a pan heat the oil medium to high heat, with a tablespoon of olive oil

  2. 2

    Add the chopped vegetables as onions, garlic, celery and red pepper. Stir all together for 5 mins.

  3. 3

    Add the cumin powder and salt and pepper and the tomato sauce and let it cook for another 7 mins.

  4. 4

    Add the eggs, cover and leave to coo for 8 mins. Add the fresh spinach and feta cheese at the end.

  5. 5

    Serve with fresh bread.
