Dal Tadka is a popular Indian lentil dish and can be cooked with various types of dal .Today I am sharing this lentil dish made with chana dal or Bengal Gram Dal but with a twist. The dal is lightly roasted before soaking to impart a smoky flavour to this dish.The lentil is then cooked in aromatics and spices until creamy , then tempered with a spiced oil tadka on top. Serve this flavourful dal with steamed or jeera rice or roti and paratha in lunch or dinner.

Ingredients

  1. For Pressure Cooking :
  2. 1 cuproasted Bengal Gram (Chana Dal)
  3. 1tomato chopped
  4. 1/4 tspturmeric
  5. 1/2 tspsalt
  6. 1 tspghee
  7. 3 cupswater
  8. 2bay leaves
  9. For Dal :
  10. 1 tbspghee
  11. 1onion chopped finely
  12. 3 podscardamom
  13. 1 inchstick cinnamon
  14. 4 clovesgarlic minced
  15. 1 tspginger grated
  16. 1 tspginger paste
  17. 1 pinchhing
  18. 1tomato chopped finely or 1 tbsp tomato puree
  19. 1/2 tspcumin powder
  20. 1/4 tspred chilli powder
  21. As neededsalt or to taste
  22. 1/2 tspsugar
  23. 3-4green chillies slit
  24. 1/2 tspKasoori Methi
  25. 2 tspcoriander chopped finely
  26. For Tadka :
  27. 1 tbspghee
  28. 1 tspcumin seeds
  29. 1dry red chilli
  30. 1/2 tspKashmiri Red Chilli Powder

Cooking Instructions

    Dry roast dal lightly till aromatic. Soak dal for 30 minutes. Transfer the soaked dal to the pressure cooker.Add 1/4 tsp turmeric, 1/2 tsp salt, 1 chopped tomato, 2 bay leaves, 1 tsp ghee and 3 cups water.Pressure cook the dal for 5 whistles or until the dal is cooked well but not mushy.Let the pressure release on its own.Check whether the dal is cooked well.Set aside.

    Heat 1 tbsp ghee.Add half crushed cardamom and cinnamon, 1/2 tsp cumin seeds and pinch of hing.Saute until spices are aromatic.Add minced garlic and saute till aromatic.Now add chopped onion and saute till translucent. Add grated ginger and saute.Then add ginger paste.Add salt and 1/2 tsp sugar or to taste.Saute and add chopped tomato.Fry in low flame till tomato is mushy.Add red chilli and cumin powder.Fry till spices turn aromatic and oil releases.Pour the cooked dal over it and mix gently.

    Adjust consistency by adding hot water as required.Cover and simmer for 5 minutes till dal absorbs the flavour.Furthermore, heat 1 tbsp ghee in a pan.Sprinkle cumin seeds, 1 dry red chilli and 1/2 tsp Kashmiri Red Chilli Powder. Pour the tempering over dal.Sprinkle chopped coriander and kasoori methi and mix well.Enjoy Chana Dal Tadka with steamed or jeera rice or any Indian flatbread in lunch or dinner.
