Ingredients

  1. 1 cupraw spinach (about 30 grams)
  2. 1/2 cupcooked quinoa (about 85 grams)
  3. 3.5–5 oz cooked shrimp (100–150 grams)
  4. 1/2 cupdiced cucumber (about 75 grams)
  5. 1/4 cupdiced radishes (about 30 grams)
  6. 1/2 tablespoonchopped green onion
  7. 1 tablespoonolive oil
  8. 1 tablespoonlemon juice
  9. Salt and pepper to taste

    Prepare the ingredients. Cut the shrimp into pieces. Slice the spinach into strips. Place the vegetables and quinoa in a salad bowl.

    Mix well and add the shrimp. In a cup or small bowl, combine the olive oil, lemon juice, salt, and pepper.

    Whisk thoroughly with a fork or small whisk. Pour over the vegetable and shrimp mixture. Serve with crackers or corn tortilla chips.
