A pot full of fresh green vegetables. Besides cooking for my family, I often make a separate pot of green veggies just for myself, maybe because I enjoy eating them this way.

Cut all the vegetables into pieces. Add a little oil to a pot, then add the vegetables and stir-fry until slightly browned.

Add the tofu. In a bowl, mix 1 tablespoon vegetarian oyster sauce, 1 tablespoon sesame oil, 1 tablespoon sugar, 1 tablespoon water, and 1 teaspoon bouillon powder. Stir well and pour over the vegetables, mixing to combine. Then add the can of coconut milk and simmer on low heat until the liquid is just covering the vegetables.
