May 1 , Maharashtra Day marks the formation of the Western State in India . Maharashtra came to be into being on May 1, 1960.
On this Auspicious Day I made a different type of creamy , flavourful Cantaloupe Pudding or Muskmelon Kheer.

Steps

Cook soaked rice in double the amount of water. The rice should be mushy. Keep aside.

Blanch the almonds & grind to paste. Add little milk to grind.Keep aside.

Heat milk in a thick bottom pan 🥘. Add almond paste & cook stirring continuously.

Add rice & cook till milk thickens. Add sugar & cook for 5-7 minutes more till sugar dissolves. Add muskmelon puree.Cook for 5 minutes, stirring occasionally. Switch off the gas when it has acquired the required consistency.

Cool a little. Add cinnamon powder. Mix well. Refrigerate till serving time. Serve chilled garnished with muskmelon seeds & chopped pistachios. Enjoy Maharashtra Day with this unique fruity pudding.
