Prepare ingredients:
Remove the Italian sausages from their casings and dice the vegetables if bought fresh - 2
Cook Sausage and Vegetables:
In a flat bottom dish, heat a drizzle of oil on medium and add the uncased sausages. Use a utensil to crumble the meat. After the meat is crumbled, allow it to crisp on one side for a few minutes at a time, mixing occasionally.In another dish, heat oil (or pancetta fat) over medium-high heat and add the diced onions and peppers. Season with salt and pepper, garlic salt and onion powder. Add ~1 tbsp minced garlic. And stir occasionally until the vegetables are soft

Cook the Pasta:
After setting aside and mixing the cooked meat and vegetables, heat a pot of hot water to boil. Cook the egg noodles stirring occasionally until desired texture (~5-6 mins for al dente). When finished, add to cooked meat and vegetables.

Blend the Sauce (while pasta cooks):
In a blender, add the cottage cheese, Parmesan cheese, milk, tomato paste, and garlic. Sprinkle with garlic salt and red pepper flakes and blend until smooth (2 cycles of “smoothie” for my Ninja blender). Pour the mixture over the meat, vegetables, and cooked noodles and mix well.

Cook the Spinach (while pasta cooks):
While boiling the water for the pasta or before blending the sauce, heat a drizzle of oil in a narrow dish on medium/medium-low heat. Add the package of spinach and cover. Check in while cooking the pasta and making the sauce, then add to the fully combined ingredients when the spinach is fully cooked.

Finish the Meal:
Stir the mixture of all ingredients well and serve. Optionally add sliced cherry tomatoes and additional red pepper flakes on top and enjoy :)
