Chicken Bacon Ranch Penne Pasta

#GlobalApron 24 week 16 ingredient chosen is Penne Pasta. This started as a cold dish but we ate it warm today and will have cold salad tomorrow.

Ingredients

6-8 servings
  1. 2 cupscooked shredded chicken (I used a rotisserie chicken)
  2. 6 slicesbacon cooked crisp and chopped
  3. 1/2 cupchopped onion
  4. 2-3 clovesminced garlic
  5. 1/2 cupBottled ranch dressing (more can be added if needed)
  6. Shredded cheese (I used pizza cheese)
  7. 8 ouncespenne pasta cooked al dente in salted boiling water. Drain and rinse in cold water

Cooking Instructions

    Cook bacon, crumble when cooled

    Totally optional but I reserved a bit of bacon grease an added my garlic, onion, and chicken in a skillet and heated thru.

    Toss together chicken, garlic, onion, cheese and 1/2 the crumbled bacon with the pasta. Add ranch and combine.
    If serving cold,cover and refrigerate. When it is cold you may need to add additional ranch dressing.

    Before serving top with additional cheese and reserved bacon.
