Egg spinach curry

Boi eggs. Let them cool.
peel and make two pieces. keep aside - 2
Clean and wash spinach.Boil water in big pot. When water boil add washed spinach.

Let spinach cook for 1-2 mnts.remove spinach from hot water. immediately put in ice cold water. Leave for 5 mnts.

Remove spinach from cold water.add green chillies.grind and make puree.keep aside

Heat oil in pan add bay leaves.now add chopped ginger and garlic saute till light brown add chopped onion cook for five mnts.

Now add spinach puree.add red chilli powder, turmeric powder,garam masala powder and salt mix and cook for five mnts on slow flame.

Add boiled and sliced egg mix

Heat oil add cumin seeds and whole red chillies.remove from fire and add in spinach egg curry.

Serve with roti or rice.
