Preparation: clean and chop the rhubarb. Grease a cake tin (10-inch diameter). Switch the oven on to pre-heat to 180C.

Thoroughly combine all the dry ingredients in a mixing bowl.

Whisk together the wet ingredients in a jug. Pour this into the mixing bowl, combining dry and wet ingredients thoroughly to form a smooth batter.

Pour the batter into the cake tin. Then add the rhubarb pieces on top of the batter, pushing in a little bit.

Bake for 50-60 minutes - it is done when a skewer comes out clean.
About ten minutes before the end remove the cake from the oven and sprinkle generously with caster sugar.
Allow the cake to cool before attempting to remove it from the tin.
