In a large, heavy-bottomed pot, heat the olive oil and add the chopped shallot. Sauté until softened. Stir in the rice to coat.

Cook the rice, adding the hot broth a little at a time and stirring frequently. Halfway through cooking, add the tomato purée.

When the rice is cooked, divide it among plates. Place a spoonful of burrata in the center of each serving. Garnish with fresh basil and serve.
