Ingredients

  1. 1shallot
  2. 1 tablespoonolive oil
  3. 1 2/3 cupsArborio rice (about 330 grams)
  4. 6 1/3 cupshot vegetable or beef broth (about 1.5 liters)
  5. 1 cuptomato purée (about 250 grams)
  6. 1ball burrata cheese (about 9 ounces or 250 grams)
  7. Fresh basil

    In a large, heavy-bottomed pot, heat the olive oil and add the chopped shallot. Sauté until softened. Stir in the rice to coat.
