Red Poha or Flattened Rice Kheer with grated Beetroot by me is a beautiful fusion with a lovely flavour and aroma. Though it's a simple one, addition of Beetroot makes it an interesting one. The ingredients can be altered according to one's own preference. As it is already tried, I have given the exact measurements but you can always increase or decrease as desired. Serve it warm or cold. It is yum both the ways. I sometimes do add Fresh Cream also to make it more rich. It adds an element of richness to the Kheer. If the Malai is homemade, it's even more better. Khoya or Mawa can also be added but I don't prefer store bought one. If at all I add it, I make it at home. Enjoy this delicious Dessert on any special holiday or occasions as well as Festivals.

Wash and soak red beaten rice for about 15 minutes. In the meantime, bring milk and sugar to a rolling boil on a high heat at first. As soon as it starts boiling vigorously, lower the heat. Add soaked red poha or beaten rice to the pot with simmering milk. Allow it to simmer on a low heat. Also add whole cardamoms too. They can be partially crushed as well.

Also add the grated beetroot. Allow it to simmer on a low heat until it reduces to 3/4th of it's original volume. Cook until done for about 15-20 minutes in all on a medium high heat.

Stir it at regular intervals and adjust the consistency to your liking. Switch off the heat and garnish with almonds. Serve it cold or warm as desired. Enjoy!
