Carrot Lachha Paratha

Mix atta, maida,salt, sugar, refined oil and baking soda in a bowl. Add water to make a medium soft dough. Cover the dough with moist napkin and keep aside for 15mins.

Grate carrots finely.

In a kadhai, add 1tbsp refined oil and switch on the burner. When the oil becomes hot, add cumin seed and allow it to flutter. Add grated carrot into the hot oil and mix well. Sauté for 3 minutes in low heat with salt. Add some ghee and saute for 1min. Transfer the cooked carrot in a plate and allow it to cool.

From the dough make four balls. With the help of roller pin, make thin round rotis. Spread ghee on the roti, over it spread carrot and finally sprinkle maida. Using a knife, cut 1inch wide slices lengthwise. Then roll each slice, one over another.

Finally the ball is prepared. Roll each ball with roller pin into thin rotis. Roast both sides of the rotis on the flat tawa with/ without adding ghee till golden brown.

Cut the paratha into half and serve with raita and pickle. I have prepared boondi raita and served with mango ginger chutney pickle.
