Cabbage and Beans Fry with Dessicated Coconut

Wash the vegetables and allow them to drain at first. In the meantime heat oil in a kadai. Add hing, curry leaves, coriander leaves, mustard seeds one by one. Allow the black mustard seeds to crackle before adding anything else. Now add the garlic and green chillies too. Fry for a minute. Keep the heat on a low.

Next is to add the grated cabbage. Fry it for about 2-3 minutes until there is no raw smell and it gets mixed well. Now add the simple spices along with the dessicated coconut followed by the beans.

Mix and cook well covered on a low heat until done. Adjust salt later on if required. This is a no Red chilli powder recipe. If desired you can very well add it. But I prefer it this way for my family.

It gets done in about 15-18 minutes in all. The crunch of the vegetables has also to be maintained. Do not add water or over cook it. Both the veggies get done easily. So that's it. Garnish with more of chopped coriander leaves.

Serve it piping hot right away for Breakfast, Lunch or Dinner alongside both Rice and Rotis. Enjoy!
