Cut fresh paneer into cubes. In a pan, boil 2cups of water with 1/2tsp salt. Add paneer cubes and boil for 2-3 minutes. Switch off the burner and discard the water. Collect the paneer cubes in a plate.

Take 1/4 th of a pineapple. Remove the skin and chokes. Cut into small slices. Grind pineapple slices in a grinder to make a smooth paste.

In a nonstick kadhai, add refined oil and switch on the burner. When the oil becomes hot, add cumin and carom seed. When they start fluttering, pour the pineapple paste into the hot oil and mix thoroughly. Add salt, sugar and chili flakes and mix well. Keep on stirring for 5mins in low flame so that the paste starts changing color. Add paneer cubes and mix gently.

Cook for 2-3 minutes more so that the pineapple juice enters into the paneer cubes. Switch off the burner and add kasundi. Mix well. Transfer into a serving bowl.
