Ingredients

  1. 1/3 cupcognac, Courvoisier Le Cognac de Napoleon VS is the brand I used
  2. 1/4 cupbalsamic vinegar
  3. 1 cupdistilled white vinegar
  4. 1/4 cupmirin
  5. 2 tablespoonsyellow mustard seeds
  6. 1 leafBay leaf crushed
  7. 1 teaspoongranulated garlic powder
  8. 2 cupssliced radishes
  9. 3 cupscelery
  10. 1large white onion sliced
  11. 2 tablespoonswhole black peppercorns
  12. 6whole banana peppers/ pepperconi
  13. As neededcanning salt
  14. 1/2 cupsugar

Cooking Instructions

    Slice, and quarter the radish. Slice the celery. Leave the baby carrots whole if they are small enuff.

    Heat all the liquids to a boil. Add the spices and seasonings to the jar and pour the hot liquids to fill the jar or jars. I used 1 big pickle jar. Wipe the lid off. Add the lid and allow it to cool. Place in the refrigerator overnight. Serve I hope you enjoy!!! Keep in the refrigerator as long as you would normal pickles.
