We’re kicking off the start of Valencia orange season with a cake that brightens up the gloomiest month of the year.

In a large mixing bowl, beat the eggs with the sugar and a pinch of salt. Add the heavy cream and vegetable oil.

Add the flour and baking powder, then grate the orange zest over the mixture. Stir in the egg, cream, and oil mixture until everything is well combined.

Juice the orange and add the juice to the batter along with the pistachios, either finely chopped or crushed. Mix well.

Preheat the oven to 350°F (180°C). Grease a baking pan with oil, pour in the batter, and once the oven is ready, bake for 30 minutes.

Remove from the oven and check doneness by inserting a toothpick or the tip of a knife—if it comes out clean, the cake is done. If it comes out wet, bake for another 5 minutes or until fully cooked. Let cool and decorate as desired before serving.
