Today I have made a tasty UP style khatta meetha kaddu sabji. It's very easy to make.
Steps

First wash the pumpkin and remove its seeds and then cut into small pieces.

Heat mustard oil in a kadai add pachphoran (cumin seeds, mustard seeds, fennel seeds, nigella seeds, methi seeds) hing, bay leaves, red chilli, saute few seconds then add chopped green chilies, grated ginger and saute until the spices are well combined.

Now add chopped pumpkin, salt, red chilli powder, coriander powder, turmeric powder, cover and cook on low heat for 7-8 minutes stirring in between until the pumpkin is cooked well.

Now put jaggery, boiled chana, dry mango powder, mix it well and cook until the pumpkin absorbs all the flavours. Lastly put coriander leaves. Yellow pumpkin sabji is ready.

Enjoy khatta meetha kaddu sabji with Paratha, puri, roti.
