Our favourite Tofu in Sauce

We make lots of sauces and we think that this one it the best so far! The first time we made it the whole family enjoyed it and we were able to make it again and perfect it. Once you get the hang of it, you could add your own things and make it yours!
We tried it with chickpeas when we didn't have tofu and it was amazing! Our grandmother was impressed. We guess it could work with any bean (maybe not lentils).
We like it with rice and you could try it with our Einkorn Bread Muffins. You could eat the tofu cold from the fridge as well.

Put the oil in a frying pan on medium low heat

Add half the salt to the oil

Cut the onions.

Turn the pan up to medium high heat and add the onions. Also preheat the oven to 220C.

Drain and squeeze the tofu with kitchen towel.Cut the tofu into cubes put the tofu into the baking tray with the marinating seasonings and drain some oil from the onions for to bake the tofu in then put it in the oven on 220C.

Chop the tomatoes. If using canned, leave this step out.

Put the onions on one side of the pan add the tomatoes with the rest of the salt and let the tomatoes cook.

Add the tomato puree on another side of the pan

On different sides, add the seasonings and stock cube. Mash the cube and let the seasonings, cube and puree fry. The picture shows the puree stock and seasonings mixed together.

Mix the ingredients in the pan together.

Add the tofu from the oven and mix well.

Add the coconut milk.

Cover and let the sauce cook for 10-20minutes stirring every 5 mins do the bottom doesn’t burn.

The sauce should be shiny. It can be served warm or cold (in the fridge).
