Clean wash and chopped methi leaves
Heat 1 tsp oil in pan add chopped methi leaves and saute till dry completely - 2
In a mixing bowl take wheat flour and semolina add clarified butter and cornflour add sauted methi leaves mix all well

Now add all dry spices powder add white sesame seeds cumin seeds carom seeds salt mix all well together
Add little by little water and knead a tight dough cover
Let it rest for 10 min - 4
In a mixing bowl add cornflour add ghee mix well whisk well make a paste keep aside

After 10 min add 1/2 tsp oil in dough and knead again
Make equal size balls from dough
Take one portion of dough and start to roll with rolling pin roll it in square shape cut the sides apply cornflour paste all over and fold it - 6
Again apply cornflour paste and fold it gently roll it do this process for 3 - 4 times
At last cut into 1/2 inches sticks check the layers - 7
Heat up oil in the pan deep fry all mathris in batches until crisp and golden in colour

Your crispy layered methi leaves mathri are ready
You can store for 2 months in air tight container
