A popular comfort food packed with nutritious lycopene, eggs, and edamame. Great served over rice or noodles.

Prepare all the ingredients.

Wash the tomatoes and dice them.

Beat the eggs. Heat a pan, add 1 tablespoon vegetable oil (about 15 ml), and scramble the eggs until cooked. Transfer to a plate and set aside.

In the same pan, add the diced tomatoes and stir-fry for 5–10 minutes.

Add the cooked eggs back to the pan, season, and mix well.

Transfer to a plate and enjoy.
