To prepare this recipe, start by bringing a large pot of water to a boil for the pasta. Meanwhile, place the speck strips in a small skillet (no oil needed) and cook over low heat until lightly browned. While stirring the speck with a wooden spoon, cut the scamorza cheese into 1/2-inch cubes (about 1x1 cm).

When the water boils, add the pasta and cook for half the time indicated on the package. Drain the pasta and return it to the pot. Add the béchamel sauce (reserve 2 tablespoons), the browned speck, the scamorza cubes, and only 2 tablespoons (25 grams) of grated Parmesan. Stir until everything is well combined.

Spread the reserved 2 tablespoons of béchamel sauce on the bottom of the baking dish, add the pasta mixture, and sprinkle with the remaining 2 teaspoons (10 grams) of grated Parmesan.

Bake on the middle rack of a preheated oven at 350°F (180°C) for about 25 minutes. Remove from the oven and serve hot.
