A Scottish heritage adapted and the history is not known but the cake is not a Dundee cake instead loads of fruits, fruit peels and berries such as cranberries, blueberries used.
Steps

In a bowl add fruits, fruit peels, berries soaked in fresh orange juice, rum overnight or preferably 4 days.

In a bowl add brown sugar, butter whisk well, add one egg at a time and whisk, add 1 Tbso flour and mix well
- 3
Mix well, add almond flour, flour, baking powder, ginger powder, cardamom powder, vanilla paste, mix well

Add fruit peels, berries soaked in rum, fruits and mix well altogether

Pre heat the oven at 180 deg C and grease the cake tin, add the batter. Tap to escape the bubbles and bake for 1 hr and then reduce the temp and bake for 1 more hour

Check doneness and prick and add spiced rum and it will be soft, demould and garnish with icing sugar.

Note - keep it covered and can enjoy by drizzling rum every time before having it
