Heat olive oil in a kadai. Saute onion and garlic until light brown.

Now add cubed potatoes and cook for about 8-10 minutes. Also add blanched spinach along with salt and pepper. Take it off the heat after done. Let it cool down a bit and then blend into a fine puree.

Add this puree back to the kadai again. Add water if required and it's too thick. You can add it according to your preference. Adjust salt and pepper. Bring it to a rolling boil for a minute or two. That's it. It's all done.
