Place water and kombu in a pot and let it sit for 30 minutes.

Sprinkle salt on the tai fish head and let it sit for about 10 minutes to remove any odor.

Briefly blanch the tai fish head in boiling water for 10-20 seconds.

Rinse thoroughly with cold water to remove blood and impurities.

Heat the pot with kombu over medium heat. Remove the kombu just before it boils (around 176°F).

Add sake to the broth and then add the tai fish head. Simmer gently over low to medium heat, skimming off any foam.

Dissolve the miso in the broth and add it to the pot. Be careful not to let it boil after adding the miso.

Turn off the heat and serve in bowls. Garnish with chopped green onions or the green part of a long onion, if desired. A simple fish head soup is ready!
