Orange Chicken with White Rice

Ingredients

40-45 minutes
4 people
  1. Chicken:
  2. 3-4chicken breasts
  3. 1/2 cupcornstarch
  4. 2eggs
  5. 1 cupflour
  6. salt and pepper to taste
  7. 1 cupoil
  8. Orange Sauce:
  9. 1 cuporange juice (no pulp)
  10. 1/2 cupsoy sauce
  11. 1/2 cuphoney (or brown sugar)
  12. 2 tbsprice vinegar (or white vinegar)
  13. 2 tspgarlic (minced)
  14. 2 tbspcornstarch mixed with 4 tbsp water (to thicken)
  15. Rice
  16. 2 cupswhite rice (or jasmine)
  17. 1 tspsalt
  18. sesame seeds (optional)
  19. green onions (optional)

Cooking Instructions

    I use a rice cooker, but here are steps incase you do not own one:

    Boil 4 cups of water

  3. 3

    Add rice and salt, cover and reduce to low and simmer for 15 minutes

  4. 4

    Remove from heat and let it sit for 5 minutes before uncovering

  5. 5

    Cut chicken into bite sized cubes

  6. 6

    Season the chicken with salt and pepper

  7. 7

    Coat chicken in cornstarch

  8. 8

    Dip into beaten eggs

  9. 9

    Coat with flour (optional, but I add small amounts garlic powder and onion powder to mix with flour)

  10. 10

    Heat oil in a pan and fry the chicken until golden and crispy

  11. 11

    Remove and drain on paper towels

  12. 12

    In a saucepan or pot, mix orange juice, soy sauce, honey, vinegar, and garlic. Bring to a simmer

  13. 13

    Stir in the cornstarch slurry and cook until the sauce thickens.

    Toss the fried chicken in the orange sauce until fully coated

  15. 15

    Serve over warm white rice

  16. 16

    Optional: garnish with sesame seeds and chopped green onions
