For Vasant Panchami (indian spring festival) today, I made this saffron scented pineapple halwa. We wear and cook something kesari (orange/yellow colored) on this festival. This indian pineapple dessert was just perfect for the occasion. Pineapple Halwa is made with fresh pineapple, semolina, sugar, ghee and scented with saffron that also lends it a gorgeous color. This pineapple halwa is perfect for festivals, celebrations or just when you are craving a warm bowl of halwa for breakfast.

This indian pineapple dessert was just perfect for the occasion. Pineapple Halwa is made with fresh pineapple, semolina, sugar, ghee and scented with saffron that also lends it a gorgeous color. This pineapple halwa is perfect for festivals, celebrations or just when you are craving a warm bowl of halwa for breakfast.

First of all, In a pan heat 1 tablespoon ghee and roast cashews and almonds in it for 2 minutes.Similarly roast raisins for a minute or until they swell up. Once done remove them in a plate.Now add 2 tablespoons of ghee in the same kadai and roast rava/ semolina for 4-5 minutes on medium to low heat till it turns light golden and aromatic.

Keep roasted suji/rava aside.

In another kadai add a tablespoon of ghee and then add finely chopped pineapple along with 2 tablespoons of sugar. Roast on medium heat for 5-6 minutes or until it gets a nice light golden colour.

Further add water to it and bring it to a boil.

Add soaked saffron with water to it.Now add roasted rava and while stirring it continuously cook till the rava absorbs all the water. Do not over cook, else the halwa will become dry.

Further add sugar and let it dissolve completely.Now add the rest of the ghee and mix well.

Lastly add the roasted nuts, raisins and cardamom powder,mix well and take it off.
As the rava begins to cool down it will slightly thicken, so don’t overcook it. - 8
Pineapple Halwa/ Pineapple kesari is ready. Serve hot.
