Ratalu Puri is a popular snack from the state of Gujarat. A surti street food that can be made easily at home. Yummy and spicy pakodas made with purple yam. It is made using purple yam and deep-fried until fluffy and golden brown. Serve it alongside chutney to enhance its taste.

Mix whole coriander seeds and black peppercorns and grind it just a little so that it is only half crushed and not into a powder form.

First wash the purple yam properly then grease your hands with oil and peel the yam and slice it. Keep the thickness little more than very thin. It is important to grease your hands so that you do not feel itchy after cutting the yam.

Mix together besan, ginger, garlic, green chilli paste, turmeric powder, salt and baking soda in a bowl. Now add water to make medium pouring consistency batter. Mix it well and whisk it so that no lumps are found in the batter.

Heat oil in a frying pan and add 2 tbsp hot oil to the prepared batter and give it a good mix. Now dip yam slices one by one in the batter and sprinkle crushed coriander - black pepper on top and then put it in the hot oil. Fry it on medium heat until light pink in colour. Prepare all kand puri in the similar way.

Now our Ratalu Puri is ready for serve. This puri is best served as a snack with a hot cup of tea or coffee. It can be served sprinkled with chaat masala, fried green chillies, tomato sauce or green chutney.
