The " Times Foodie " article dated Feb 21, 2025 , in The Times of India as acclaimed ' Crunchy, healthy Makhana: Superfood for 2025 ' .

Indian households thrive on home - cooked food & makhana fits right in it . It is not only a healthy snack but a game - changer . It can be mixed with subjis , made into desserts , raitas, so on & so forth.

Makhana are also called "Black Diamonds " , & are quickly becoming Indian Superfood due to its low calorie count , anti- ageing properties ,high protein, & blood sugar control, weight management, heart health & digestion. Another plus point is their crunch which also adds to their rising popularity.

Last but not the least , our Finance Minister Ms Nirmala Sitharaman, in her Budget speech of 2025 , announced the formation of a Board to boost the Production , Processing & Marketing of fox nuts . All this makes us realise that we should include Makhana in our diet - plan .

Ingredients

15 - 20 minutes
Makes 25 - 30 ladoo
  1. 100 gmsMakhana
  2. 2 tbspalmonds
  3. 2 tbspwalnuts
  4. 2 tbspcashews
  5. 2 tbsppistachio
  6. 2 tbspdessicated coconut 🥥
  7. 1 tbspgolden raisins
  8. 1 big bowl of seedless dates
  9. 1/4 cupwarm milk
  10. 1 tbsppumpkin seeds
  11. 1 tbspsunflower seeds
  12. 1 tbspwatermelon seeds
  13. Ghee as required

Cooking Instructions

15 - 20 minutes
  1. 1

    Assemble all the ingredients.

    Take 1/2 tsp ghee in a pan. Add makhana & roast them on a slow flame 🔥 till nice & crispy. Remove in a large plate or thali & cool.

    In the same pan, take 1/2 tsp ghee & roast almonds for 1 minute. Add walnuts & roast both of them together for 1 more minute. Remove & cool in another plate.

    Likewise take ghee in the same pan and add cashews. Roast them lightly.Remove and cool along with almonds & walnuts.

    Again add 1/2 tsp ghee in the same pan, add all the seeds & roast them till they become little brown. Remove & cool with other dryfruits. Roast dessicated coconut without using ghee, in the same pan till aroma comes. Remove & cool with the other dryfruits.

    Now saute golden raisins in 1/2 tsp ghee. Add pistachio & roast together. Remove & cool in a small bowl separately.

    Finally saute the dates in 1 tsp ghee till they become soft. Remove & cool in the sauted golden raisins & pistachio bowl.

    Now take a big mixer jar, add makhana & grind them coarsely. Remove in a big thali.

    Similarly, grind roasted dryfruits & seeds coarsely. Remove along with powdered makhana.

    Now grind golden raisins, pistachio & dates with 1/4 cup warm milk to form a paste. Add this paste along with the powdered makhana.

    Mix everything very well. Add dried rose 🌹 petals & mix very well.

    Lastly add cardamom & nutmeg powders. Mix well.

    Take a little mixture in between your palms & press well to form a ladoo. Make all the Ladoo the same way.

    Note. : There is no need to follow the exact measurements for this recipe. You can add dryfruits of your choice & also adjust their quantity as per your liking.

    Also note, if the mixture is a bit dry & you are unable to bind the ladoo, add warm melted ghee (upto 4 tsp). Mix & bind the ladoo.
