It is considered auspicious to eat Shakarkand ( sweet potato 🍠),in any form on Mahashivratri. Many dishes are made from Shakariya for e.g. subji, sheera , Paratha, chivda etc . Gulab Jamun made from Shakariya is an awesome dessert . Soft sweet potato balls soaked in saffron sugar syrup is a Heavenly treat .

Gulab Jamun : Pressure cook sakarkand up to 2 whistles. Cool & peel sakarkand & grate it.

Add cooking soda, arrowroot & milk powder & make a soft dough. Make medium size balls from it.

Heat ghee in a pan, taking care that it's not too hot. First fry 1 jamun ball in it. Don't flip for 1 minute. Then slowly flip it with the help of a spoon.

Deep fry till brown from all sides. Remove it & drop it in warm sugar syrup (chasni).

Deep fry a few jamun balls the same way &drop them in warm sugar syrup. Keep aside for 3 - 4 hours.

Sugar syrup : Take sugar in a pan, add water & boil it till sugar melts. Add cardamom powder & saffron water & cook the sugar syrup till 1 thread consistency is reached This will take about 7 -8 minutes.

How to serve : Take gulab jamuns in a bowl.Warm the gulab jamun in the microwave for 30 seconds / 1 minute. Serve hot.
