Heat oil in a large skillet over high heat and melt the butter.

Add onions and sauté till soft.

Add tomato and cook till mushy.

Add the spices and green onion and mix well. Cook till oil separates.

Add water and cook for 1 minute and then spread the gravy in the pan, evenly.

Pour the eggs, evenly over the gravy, sprinkle cheese and arrange the sliced eggs, sprinkle cilantro. Cover and cook on medium-low heat till omelette is set and liquid has dried.

Carefully remove to a serving plate, slice and serve with paratha or toasted bread slices.
