Smoked St. Louis Style Ribs on the Kamado Joe

Pat the ribs dry with paper towels. Season both sides with salt and meat rub, then let them rest for 30 minutes.

Start the fire in the Kamado Joe and set the temperature to 300°F (163ºC). Add some hickory wood for smoke.

Place the ribs on the grill and cook for 45 minutes. Flip the ribs and cook for another 45 minutes.

Prepare two layers of foil. Squeeze honey and mustard onto the foil, then add butter and sprinkle some more meat rub. Place the ribs meat-side down on the foil.

Wrap the ribs tightly in the foil and place them back on the grill. Cook for another 45 minutes, then flip the foil-wrapped ribs and cook for an additional 30 minutes.

Unwrap and enjoy!
